Island Roasted Chicken with Thyme Mustard Sauce

Preheat oven to 375°F. Combine seasonings in a small bowl. Spread butter evenly over chicken and put some under the skin and in the cavity. Insert garlic and cloves under skin, over the breasts and legs and in the cavity. Stuff thyme stems under the skin and in the cavity. Roast for 1 hour 15 minutes. Baste every 15 minutes with pan juices.

Serve with Sauce below.

Combine all the mustard sauce ingredients in a microwave dish. Microwave until it bubbles. This sauce is also good with steak au poivre, roast pork or lamb, or broiled fish.

Ingredients

  • 1 whole chicken, washed
  • ½ tsp ground allspice
  • ½ tsp ground nutmeg
  • ½ tsp ground cloves
  • ½ tsp ground cinnamon
  • ½ tsp ground cayenne
  • ¼ tsp salt
  • 1 TBS softened butter
  • 8 slivered garlic cloves
  • ½ TBS whole cloves
  • 12 stems fresh thyme
  • 1 cup mustard thyme (see below)
  • Mustard Sauce
  • ¾ cup light cream
  • ¼ cup Dijon style mustard
  • 3 TBS fresh thyme leaves
  • 1/8 tsp fresh ground pepper
